Yields: About 24 Meatballs | Prep Time: 15 Minutes | Total Time: 45 Minutes

INGREDIENTS:

1 lb ground pork (or sub with sausage)
1 lb ground beef
2 large eggs
1 tbsp Worcestershire sauce
½ cup grated Parmesan cheese
½ cup plain breadcrumbs
2 tbsp Steak Shake
2 tbsp Gulf BBQ

🔥 PROCESS:

1 | In a large bowl, combine all ingredients. Mix thoroughly with your hands until everything is well incorporated.

2 | Don’t overmix — that’ll make the meatballs tough. If the mixture feels dry or crumbly, add a little water, one tablespoon at a time.

3 | Shape the mixture into 1.5” meatballs and place on a parchment-lined baking sheet, spaced evenly apart.

4 | If time allows, refrigerate the formed meatballs for at least 1 hour to help the flavors meld. Overnight is even better.

5 | Preheat your smoker to 180–200°F for maximum smoke flavor.

6 | Place the meatballs directly on the smoker grates and smoke for 20 minutes.

7 | Increase smoker temp to 350°F and continue cooking for another 10 minutes or until the internal temperature reaches 165°F.

8 | Remove from heat and serve hot — or cool and freeze for quick meals later on.
