Pork Belly is incredibly versatile, full of flavor, and has texture for days, but we wanted to take it to another level and add a little fun to the cook. We take the baconey (not an actual word, but we are going with it), juicy goddess of pork belly, turn it into a burnt end kabob, making it a finger food worthy of parties and backyard get-togethers! We cut the pork belly into thick strips and used a half-slab, but you can customize the amount and thickness as desired. For this preparation, we use mayonnaise as a binder for added richness and a variety of Those Florida Guys rubs—perfect for tailgates, BBQ parties, or summer grilling season.

INGREDIENTS:
½ slab pork belly (skin removed)
Mayonnaise
1 tbsp All-Purp
1 tbsp Gulf BBQ
1 tbsp Errthang
1 | Pat dry the pork belly.
2 | Slice the pork belly into strips about 1.5” wide, then trim to about 5” long.
3 | Trim off the skin of each piece if not done by the butcher.
4 | Work the strips onto skewers. Poke the skewer barely through the top.
5 | Bring the smoker up to 250°F.
6 | Apply a thin layer of mayonnaise to each skewer using your hands.
7 | Liberally coat all sides of each skewer with All-Purp, Gulf BBQ, and Errthang.
8 | Place the skewers on the smoker with the skewers facing out.
9 | After 2 hours, turn and rotate the skewers as needed.
10 | After 4 hours cooking, the internal temperature should be near 200°F.
11 | Once the pork belly is probe tender and the fat has rendered to your liking, pull the skewers off the smoker.
**If you want to sauce, brush on before pulling and smoke for another 10 minutes to set the glaze.**
12 | Allow to cool for 5 minutes.
