Smoking fish brings out the natural sweetness of the meat and adds a mellow, savory depth that’s hard to beat. It can be a little tricky, but follow our cold-smoking process and you’ll nail it every time. We recommend going with fattier fish like tuna, swordfish, grouper, or kingfish to absorb the smoke and stay moist. Add a touch of Fin & Fowl and a heavy dose of Steak Shake, and you’re in for a seriously flavorful ride. Light fruitwood or oak works best, and once you try it, you'll be hooked.

INGREDIENTS:
2–4 fish fillets (bluefish, cod, tuna, snapper, grouper, etc.)
1 tbsp olive oil

🔥 PROCESS:
1 | Clean the fillets thoroughly—remove skin, bones, and scales.
2 | Pat them dry with a paper towel. Cut in half if they’re too long for your smoker.
3 | Brush both sides lightly with **olive oil**.
4 | Season one side with a light dusting of **Fin & Fowl**.
5 | Follow with a heavier layer of **Steak Shake** on the same side.
6 | Preheat your smoker to **150°F**.
7 | Place fish on a **wire rack** and into the smoker for **1 hour**.
8 | Increase temp to **225°F** and cook for another **hour**.
9 | Check every 20 minutes—pull when internal temp hits **145°F**.
10 | Want it drier and smokier? Leave it in a little longer for that **flaky finish**.
11 | Remove from smoker, let rest for **5 minutes**.
12 | Serve hot—or chill it and flake over a salad later!
