Florida Style Smoked Pork Belly | Juicy, Tender & Packed with Flavor


Few things scream BBQ like a perfectly smoked **pork belly**—crisped fat, juicy meat, and rich smoky flavor. Our **Florida Style Pork Belly** recipe keeps it simple, focusing on rendering that fat just right and maximizing the natural flavors of the pork, finished with **FL Gulf BBQ** and a hint of **FL Errthang**.

Perfect on its own or chopped for **nachos, tacos, or pasta**, this pork belly is everything you want in BBQ—unctuous, smoky, and melt-in-your-mouth tender. Sauce it up at the end or leave it naked—either way, it’s Florida BBQ perfection.

INGREDIENTS:

3-5 lb. uncured pork belly slab
2 cups apple juice
1 Hard Apple Cider
4 tbsp yellow mustard
1 tsp Worcestershire sauce
2 tsp FL Errthang
FL Gulf BBQ
BBQ sauce (optional)

🔥 PROCESS:

1 | Preheat your smoker to **225°F**.

2 | Trim any thick skin or excessive fat but **leave the fat cap intact**.

3 | Score the fat cap in a **1-inch diamond pattern**, cutting just into the fat, not the meat.

4 | Mix **yellow mustard, Worcestershire sauce, and FL Errthang** together and rub evenly over the pork belly.

5 | Liberally apply **FL Gulf BBQ** seasoning, working it into the score marks and all sides.

6 | Place the pork belly on the smoker, **fat cap up**.

7 | Smoke until the internal temperature hits **165°F** (about **6 hours**).

8 | Mix **apple juice** and half the **hard apple cider** in a spray bottle. **Spritz hourly** throughout the cook.

9 | Lay out **two 4’ lengths of butcher paper**, overlapping.

10 | Once the belly hits **165°F**, remove from the smoker and wrap tightly in the paper with **½ cup apple juice**.

11 | Return wrapped belly to the smoker and continue cooking until internal temperature reaches **200°F**.

**Pro Tip:** Use a rimmed pan under the wrap to catch juices.

12 | Carefully unwrap, place on a cutting board, and drizzle with the collected juices.

13 | Optional: Brush with **BBQ sauce** and return to smoker for **10-15 minutes** to set the glaze.

14 | Let rest for **15-20 minutes**, then slice or cube.

15 | Serve and enjoy!
