Sweet, tender, and wildly flavorful — these Florida Stone Crab Claws are the kind of coastal delicacy that turns any gathering into something special. Whether served chilled with a tangy mustard sauce or warm with our zesty Sunburn and Fin & Fowl seasoning, this Florida favorite is simple to prepare and guaranteed to impress.

Stone crab claws are sustainably harvested (only the claws are taken and the crab is returned to the sea), making them an eco-friendly seafood choice that doesn’t skimp on flavor. Prep is easy — serve cold or warm, and don’t forget the citrus wedges and homemade Cowboy Butter for that extra punch.

Yields: 3–5 Claws per Person | Prep Time: 20 Minutes | Total Time: 30 Minutes

INGREDIENTS:

For the Crab:
4 lbs. stone crab claws (about 25 medium claws)
Kosher salt
1 tbsp Fin & Fowl
1 tsp Sunburn

For the Mustard Sauce:
4 tbsp Dijon mustard
3 tbsp All Purp (ground fine)
½ cup mayonnaise
2 tsp Worcestershire sauce
1 tbsp fresh lemon juice
1 tsp Sunburn (optional for heat)

🔥 PROCESS:

1 | If pre-cooked and frozen:
Let claws thaw overnight in the fridge. Serve over ice with mustard sauce if serving cold.

2 | If cooking fresh raw claws:
Add 2–3 inches of water to a large pot fitted with a steamer basket. Season with Fin & Fowl and Sunburn. Bring to a boil.

3 | Add claws to the steamer basket (not touching water). Cover and steam based on size:
— Medium: 2 min
— Large: 3 min
— Jumbo: 4 min

4 | For chilled service, immediately plunge steamed claws into an ice bath for 30 seconds, then remove quickly and pat dry. Refrigerate until ready to serve.

5 | Mustard Sauce:
Whisk all ingredients in a bowl until smooth. Chill at least 30 minutes before serving.

6 | Cowboy Butter:
Gently melt our compound butter and serve warm for dipping.
