INGREDIENTS:
For the Crab:
4 lbs. stone crab claws (about 25 medium claws)
Kosher salt
1 tbsp Fin & Fowl
1 tsp Sunburn
For the Mustard Sauce:
4 tbsp Dijon mustard
3 tbsp All Purp (ground fine)
½ cup mayonnaise
2 tsp Worcestershire sauce
1 tbsp fresh lemon juice
1 tsp Sunburn (optional for heat)

🔥 PROCESS:
1 | If pre-cooked and frozen:
Let claws thaw overnight in the fridge. Serve over ice with mustard sauce if serving cold.
2 | If cooking fresh raw claws:
Add 2–3 inches of water to a large pot fitted with a steamer basket. Season with Fin & Fowl and Sunburn. Bring to a boil.
3 | Add claws to the steamer basket (not touching water). Cover and steam based on size:
— Medium: 2 min
— Large: 3 min
— Jumbo: 4 min
4 | For chilled service, immediately plunge steamed claws into an ice bath for 30 seconds, then remove quickly and pat dry. Refrigerate until ready to serve.
5 | Mustard Sauce:
Whisk all ingredients in a bowl until smooth. Chill at least 30 minutes before serving.
