Yields: 5-6 Servings | Prep Time: 15 Minutes | Total Time: 9 Hours

INGREDIENTS:

3-4 lbs. chuck roast
2-3 small yellow onions (thick sliced)
3 cups beef stock
½ cup apple cider vinegar
½ cup Worcestershire sauce
3 tbsp FL Steak Shake
3 tsp FL Gulf BBQ

🔥 PROCESS:

1 | Preheat smoker to **225°F**.

2 | Trim excess or hard fat from the chuck roast.

3 | Season roast evenly with **FL Gulf BBQ**, then rest **15-20 minutes** to sweat.

4 | Press **FL Steak Shake** firmly into the roast on all sides.

5 | Place roast on smoker, cook for **3 hours**.

6 | Mix **1 cup beef stock, ½ cup apple cider vinegar, ¼ cup Worcestershire** in a spray bottle. Spritz roast **every hour** while it cooks.

7 | Layer **onions** in a large aluminum pan. Add remaining **2 cups beef stock** and **¼ cup Worcestershire**.

8 | Place roast on top of onions in the pan. Return to smoker **uncovered**.

9 | Increase smoker temp to **250°F**. Cook **3 more hours** or until roast hits **165°F internal temp**.

**Note:** Expect a stall—just ride it out.

10 | Cover pan tightly with foil. Continue smoking another **3 hours** or until roast hits **205-210°F** internal.

11 | Rest roast in a cooler for **1 hour**.

12 | Remove roast, slice or shred. Watch for unrendered connective tissue—remove if needed.

13 | Separate fat from the cooking liquid. Return **meat, onions, and liquid** to the pan and mix.

14 | Serve and enjoy!
