Florida Smoked Bologna | BBQ-Style, Smoky, and Seriously Delicious


We’re bringing back childhood memories with a grown-up twist—this **Florida Smoked Bologna** is smoked low and slow, scored, and seasoned with FL Gulf BBQ for the ultimate BBQ bologna sandwich experience. Perfectly smoky, caramelized, and finished with your favorite BBQ sauce, it’s a nostalgic classic made better!

Slice it thick or thin—fry it up on a griddle or stack it high on a sandwich. Bonus: **portion and vacuum seal leftovers** for the freezer so you’ve always got some smoky goodness ready to go.

INGREDIENTS:

5 lb. bologna chub (mixed meat is fine)
Mustard (we used Dijon)
FL Gulf BBQ
Barbecue sauce of your choice

🔥 PROCESS:

**Pro Tip:** Ask your deli for a whole bologna chub—it’s perfect for this recipe!

1 | Remove the plastic covering from the bologna and pat it dry.

2 | Score the bologna in a **diamond pattern**, about **½-inch deep** all around.

3 | Coat the bologna with mustard, working it deep into the cuts.

4 | Generously apply **FL Gulf BBQ** seasoning, pressing it into the scores.

5 | Let the bologna rest at room temp for **10 minutes**, then add another light coat of **FL Gulf BBQ** for full coverage.

6 | Preheat your smoker to **250°F**.

7 | Smoke the bologna chub for **3 to 3.5 hours** until you achieve a deep, smoky color and set rub.

**Optional:** You can spritz during the cook, but we skipped it.

8 | Brush the bologna with your favorite BBQ sauce and smoke for an additional **25 minutes** to set the glaze.

9 | Remove from smoker and let cool for **10 minutes**.

10 | Slice to your desired thickness. Serve as classic bologna sandwiches or sear thick slices on a griddle for **bologna steaks**.

11 | Serve and enjoy!
