INGREDIENTS:
2 lbs. 13/15 or 16/20 size shrimp
6-8 cups plain corn flake cereal (non-sugar coated)
¾ cup all-purpose flour
1 can or bottle of beer (ale or lager will work)
1-2 tbsp. Sunburn
1 tbsp. SPF 7
48 oz. oil for frying (we used peanut oil)
PROCESS:
1 | Peel and devein shrimp, leaving the tails on.
2 | Rinse shrimp under cold water to ensure they’re fully cleaned. Pat dry.
3 | Place shrimp in a bowl and add 1-2 tbsp. Sunburn. Toss to coat.
4 | Let marinate for 15 minutes.
5 | In a shallow dish, mix ¾ cup flour and 1 tbsp. SPF 7.
6 | Slowly whisk in beer to the flour mixture until it reaches a pancake batter consistency.
7 | In a 9x13 dish, add cornflakes. Use the bottom of a glass to crush into fine and chunky bits.
8 | Heat peanut oil in the widest pot you have to 375 degrees.
9 | Holding the shrimp by the tail, dip into the SPF 7 beer batter, fully coating all sides except the tail.
10 | Lay shrimp in the cornflake dish, flip to coat both sides, and press gently to ensure crumbs stick.
11 | Carefully lower shrimp into the hot oil, frying in batches of 5-7 without crowding.
12 | Cook for 2-3 minutes, stirring and flipping for even cooking.
13 | Transfer golden brown shrimp to a wire rack to drain excess oil.
14 | While still hot, sprinkle more SPF 7 to taste.
15 | Serve hot with your favorite chili sauce or cocktail sauce.
