Steak and Cured Egg Yoke

Cured Egg Yoke


Yields: 2 Servings | Prep Time: 10 Minutes | Total Time: 5-7 Days

Ingredients

Steps

​1 | Mix 3 parts salt to 1 part sugar and set aside.

2 | Separate the egg yolks from the whites.

3 | In a container that has a lid, pour the salt-sugar mixture in an even layer.

4 | Make divots with a spoon or your knuckles about the size of the egg yolks.

5 | Carefully place 1 egg yolk into each divot and cover completely with the salt-sugar mixture.

6 | Refrigerate the covered egg yolks for 5-7 days.

7 | After 5-7 day , check the firmness of the yolks. If they are firm enough to handle, wash off the egg yolks gently with water, then place them into an oven at the lowest temp for 1-1.5 hours.

8 | Once the yolks are cured and firm to the touch, shave them with a grater onto your steaks or whatever you’d like!

Yields: 2 Servings | Prep Time: 10 Minutes | Total Time: 30 minutes


Ingredients

1 New York Strip Steak (8-12 oz.)

FL Steak Shake rub (to taste)

Salt (to taste)

Pepper (to taste)



Steps

​1 | Bring your NY Strip steak to room temp and season well on both sides and coat the edges with FL Steak Shake seasoning.

2 | Cook the steak until it reaches an internal temperature of 130-135 degrees and rest for 10 minutes.

3 | Slice the steak, adding a little salt and pepper (if needed) and shave on the cured egg yolk

4 | The chimichurri is optional
